Cabbage is a biennial green, red or white leafy vegetable that grows as an annual. This vegetable belongs to the cabbage family and can be seen in a round or oval shape. The leaves of its inner layers are softer and brighter, and the leaves of the outer layers are darker and rougher. This vegetable is widely used all over the world and is served in two ways: cooked in food or raw in all kinds of salads. Cabbage is botanically similar to plants such as broccoli, cauliflower and Brussels sprouts or button cabbage.
According to FAO statistics in 2015-2016, China is the largest producer of kale, cauliflower and broccoli in the world. Iran produces more than 250,000 tons of cabbage every year, which is mainly harvested from Dezful, Fars province and Qasr Shirin, Karaj, Shahr Ray, Varamin, Gorgan and Bushehr regions. Iran is among the top twenty countries in the world in terms of cabbage production. Most of the cabbage produced in Iran is exported to Russia.
In Iran, the cities of Isfahan, Varamin, Dezful and Karaj are among the regions that produce cauliflower with export quality.
